Under-kneading would definitely make for dry and crumbly, but it could just as easily be over fermentation. NO formed loaf should ever be allowed to rise to double before baking ever. This one has ( 10 minutes to go ). You need to account for oven spring, so you want to stick it in the oven when it’s 3/4 of the way to doubled. In fact, it you want an absolutely foolproof loaf, you stick it in a COLD oven when it’s just 2/3 of the way to doubled, then turn the oven on. Adjust baking time accordingly.Sounds yummy, but.
